A quick trip to Wellington and one heck of a salad!
Yesterday, Beth and I hopped on the train into Wellington, which proved to be well worth it, but an expensive adventure.... and not for touristy reasons. Beth got a hair cut and I bought some sooper cool pants ($$), plus a pair of cheap, but stylish jeans ($20). After running away from the shopping district, we took the cable car up to the Botanical Gardens and walked among the trees and flowers, and got a great view of the city.The rose garden was pretty stunning, and smelled wonderful. Our trip back down the hill on the cable car was pretty uneventful with the exception of my attempt to catch a lift at the last minute.... Just kidding... This is the old cable car in the museum. The new one has automatic doors that prevent hooligans such as myself from acting out tactless tricks. Today was a sleep-in, talk to friends on the phone, and read a novel kind of day. So replenishing... Speaking of replenishing, Beth and I made a sweet salad for dinner that I would like to share with you all: THE PAEKAKARIKI SUNSET SALAD 1/2 cup quinoa a bunch of mixed greens 2 boiled eggs, shredded or diced 1/4 cup carrot, shredded 3/4 cup cucumber, diced 1/2 cup celery, diced 1 tomato, diced 1 tbsp onion, diced Dressing: 2 tbsp sundried tomato pesto sauce 1 tbsp olive oil 5 or 6 fresh basil leaves, cut up a bit salt and pepper to taste Instructions: Mix cooked quinoa with dressing and then add remaining ingredients. Toss the salad like you've lost your marbles and ingest whilst wearing dark sunglasses (the sun is setting for this salad, remember?). Suggested Less-Healthy Dessert: Toasted multigrain bread with hazelnut chocolate spread (the cheaper version of nutella will suffice).
